Dry Chilli Chicken


INGREDIENTS
  • 200 g boneless chicken
  • 2 tablespoons corn flour
  • 1 tablespoon rice flour
  • 1 tablespoon wheat flour
  • 1/4 teaspoon baking powder
  • 1 cup water
  • 1 teaspoon chopped garlic
  • 1 teaspoon chopped ginger
  • 10 g green chillies
  • 10 g onions
  • 10 g capsicum
  • 1 1/2 tablespoons light soy sauce
  • 1 1/2 tablespoons dark soy sauce
  • 1 1/2 tablespoons chilli paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/2 teaspoon crushed white pepper
  • 15 g spring onions
METHOD

Ø     Make a paste of corn flour, rice flour, wheat flour and baking powder using water.
Ø     Dip chicken pieces in the paste and deep fry till golden brown. Keep aside.
Ø     Heat oil in another pan and add the chopped garlic and ginger, followed by the diced onions, capsicum and green chilli.
Ø     Now add both light and dark soy sauce, chilli paste, salt, sugar and pepper.
Ø     Add the chicken and mix well. Garnish it with spring onions and parsley.
