Dry Chilli Chicken
INGREDIENTS
- 200 g boneless chicken
- 2 tablespoons corn flour
- 1 tablespoon rice flour
- 1 tablespoon wheat flour
- 1/4 teaspoon baking powder
- 1 cup water
- 1 teaspoon chopped garlic
- 1 teaspoon chopped ginger
- 10 g green chillies
- 10 g onions
- 10 g capsicum
- 1 1/2 tablespoons light soy
sauce
- 1 1/2 tablespoons dark soy
sauce
- 1 1/2 tablespoons chilli paste
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1/2 teaspoon crushed white
pepper
- 15 g spring onions
METHOD
Ø Make a paste of corn flour, rice flour, wheat flour and
baking powder using water.
Ø Dip chicken pieces in the paste and deep fry till golden
brown. Keep aside.
Ø Heat oil in another pan and add the chopped garlic and
ginger, followed by the diced onions, capsicum and green chilli.
Ø Now add both light and dark soy sauce, chilli paste, salt,
sugar and pepper.
Ø Add the chicken and mix well. Garnish it with spring onions
and parsley.
