Salted Egg Prawn Rolls



INGREDIENTS
·        1 kilogram prawns (cooked, deshelled, and cut into thirds)
·        1 celery stalk (finely chopped)
·        ¼ cup Japanese kewpie mayonnaise
·        2 tablespoons lemon juice
·        3 frozen salted egg yolks (grated)
·        1 tablespoon chives (chopped)
·        6 hot dog buns
·        ¼ cup butter (melted)
    
METHOD
Ø  Mix prawns with mayo, celery, lemon juice, salted egg yolks, and chives.
Ø  Slice sides off hot dog buns and brush edges with melted butter.
Ø  Toast each side lightly in a dry pan.
Ø  Stuff prawn mixture into buns.
